I made this soup while super sick, so it's pretty easy to do. Even you can Not Mess This Up!

Ingredients:

  • About 4 links of mild sausage, those little chubby ones, or equivalent
  • 2 large leeks, the white and light green portions (2-3" worth)
  • One small onion
  • Your favorite herbs (I used the following):
    • Modest sprinkle of rosemary
    • Healthy pinch of marjoram
    • A couple shakes of salt
    • A couple grinds of pepper
  • 2C beef broth
  • 2-3T tomato paste
  • 3/4-1C Brown rice

Okay, prepare for the easiness!

1) Slice up the leek into thin rings. Dice the onion.

2) Pan-fry the leeks and onions until the leek starts to fall apart from discs into sloppy rings.

3) Add the herbs to the leeks and onions, mix up, and fry for like one more minutes. Turn off the heat.

4) Slice up your sausages into rounds. They will explode everywhere, because raw sausage does that. Worry not. It's going in the crock pot anyways so who cares what it looks like?

5) Dump everything but the rice in the crock pot: meat, veggies + herbs, broth, and the tomato paste. Stir it all up and put it on HIGH for about 4 hours. Come back like an hour later and stir it around once, if you feel like it.

6) When you have about an hour left, put the brown rice into your rice cooker and turn it on. It takes about ~45 minutes to cook, so let it set for the remaining 10-15 minutes.

7) Paddle some rice into your bowl. Slop some sausage on top. Drench in the broth. DELIGHTFUL!!
