Ingredients:&lt;br /&gt;

5 extra ripe bananas&lt;br /&gt;

1 stick of butter (room temp)&lt;br /&gt;

5-6 oz Greek yogurt&lt;br /&gt;
&lt;br /&gt;
1/2 cup white sugar&lt;br /&gt;
&lt;br /&gt;
1/4 cup brown sugar&lt;br /&gt;
&lt;br /&gt;
1 tsp baking powder&lt;br /&gt;
&lt;br /&gt;
1 tsp baking soda&lt;br /&gt;
&lt;br /&gt;
1 generous shot Amaretto&lt;br /&gt;
&lt;br /&gt;
2 eggs&lt;br /&gt;
&lt;br /&gt;
2 1/4 cup flour&lt;br /&gt;
&lt;br /&gt;

Mash 4 of the bananas in a stand mixer. Scoop out the bananas and put them aside for a sec. Don&amp;#039;t bother washing out the bowl. Plop in the buyer and sugar and cream that nice and smooth. Add the two eggs, then the mashed bananas and stir it all into a wet mash. Add in the flour and baking soda and keep on running the stand mixer on &amp;quot;stir.&amp;quot; Finally, splash in some Amaretto, stir, and divide into cupcake liners. Make at 350 for 15 minutes.&lt;br /&gt;

When ready to serve, slice up the remaining banana, fry gently on both sides in a bit of butter (maybe use the butter left on the wrapper before tossing it). Once both sides of the banana coins are brown, pour in a good splash of amaretto and let it caramelize into a sauce over the bananas. Pour this concoction over an unwrapped cupcake and serve.
