&lt;p&gt;&lt;b&gt;New page&lt;/b&gt;&lt;/p&gt;&lt;div&gt;Okay, I&amp;#039;ve been looking up and comparing various banana bread recipes, and it occurs to me that the recipe I originally posted is a Singaporean variation on banana bread, and therefore meant to be extremely rich. While this recipe makes one hell of an awesome banana cake, you can pretty much omit the butter and end up with a delicious, much healthier recipe. If you need to add moisture to the batter for whatever reason, toss in 1/3-1/2 cup applesauce (and cut back to 1/2 cup sugar because the applesauce will add sweetness naturally).&lt;/div&gt;</summary>
