Aurora's tomato sauce

Tools needed:

  • Big sauce pot
  • Wooden spoon or spatula
  • Food mill or blender

Ingredients:

  • 3 cans of whole peeled tomatoes (I use Redpak) Not sure how to do it with fresh tomatoes, but they're 28 oz cans.
  • 1/2 medium onion, chopped
  • 3-6 cloves of garlic, peeled, cleaned
  • 1 package of hot italian sausage (6 links, can use more)
  • Olive oil
  • Dried oregano, basil, salt, pepper, white pepper, cayenne

Directions:

  1. Brown onion, sausage, and garlic in olive oil in a large pot
  2. Put tomatoes through food mill to extra pulp and seeds. Add tomato juice to pot.
  3. Add heavy shake of oregano, basil, salt, pepper and white pepper
  4. Add dash of cayenne
  5. Cook on medium or low for 2-4 hours, stirring occasionally.

Sauce will be thin.

If immediately using for lasagna or some other baked pasta, sausage can be pulled out and chilled to make easier to slice up, and put in a sauce layer. Otherwise, the sausage can be eaten separately.
