Boiled ~1.5 gallons of water.  Cooled to ~180F, added grains and soaked for 45 minutes.  Added 2.5 gallons of water and brought to 190F.  Added LME and DME.  Brought 10 ~180F, added soverign hops, and started a 1 hour timer.  At 30 minutes, added the irish moss.  At 15 minutes added the fuggle hops.  Cooled in a sink full of cold water to ~88F.  Added 1 gallon of cold water and pitched at 82F.

  • 6.6 lbs (2 cans) Muntons Extra-light LME
  • 1.4 lbs (1 can) Alexanders SUn Country Pale LME
  • .5 lbs Golden Promise malt
  • .25 lbs Honey malt
  • .25 lbs Maris Otter malt
  • .25 lbs Optic malt
  • 1 oz Fuggle hops pellets
  • 1 oz Soverign hops pellets
  • 1 tube White Labs 002 English Ale yeast
  • 1 tsp Irish Moss
