Coffee Cake

Easy coffee cake. Or something.

Implements

  • 9x13 pan, lightly greased

Cake

  • 12 tbsp butter
  • 1 c. granulated sugar
  • 1/2 c. brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp vanilla
  • 2 lg eggs
  • 2 c. flour
  • 1 c. (8 oz) sour cream or yogurt

Topping

  • 3/4 c. brown sugar
  • 3/4 c. chopped walnuts or pecans
  • 3/4 tsp cinnamon
  • 3/4 c. chocolate chips (optional)

Instructions

  1. Beat together butter, sugars, baking powder, baking soda, salt, cinnamon and vanilla, mixing until smooth.
  2. Add eggs one at a time, beating well after each addition.
  3. Alternately add flour and sour cream, stirring to combine.
  4. Spoon batter into pan.
  5. For the topping, combine brown sugar, nuts and cinnamon, stirring to combine.
  6. Sprinkle topping over the batter in the pan.
  7. Sprinkle chips on top (optional).
  8. Cover the pan with plastic wrap, and refrigerate overnight.
  9. Next morning, take the cake out of the refrigerator and preheat the oven to 350F.
  10. Bake for 40-45 minutes, until goden brown on top.
