Fake Thai Veggies

This recipe is for when you're scraping the fridge during a blizzard and find a (STILL MOSTLY GOOD!!!) bag of 4 week old discount leafy yu choy from Super 88 (love them!). You'll be a total boss when you whip out a delicious Thai flavored delight from nothing more than garbage from around your kitchen!

Ingredients:

Leafy greens (some)

Fish sauce (a healthy splash or 2)

2 garlic cloves, diced

1 handful basil (crappy Shaw's brand, going bad after only 4 days)

1 heaping tbsp Peanut butter (vintage 1 year)

Maple syrup (fridge-aged 3 years) to taste

A spot of cooking oil


Salvage the veggies as best you can by cutting off the brown or soggy bits. Cut and divide into stems and leaves. Heat a bit of oil in a wok and fry the garlic for 30 sec. Toss in the stems and fry until almost tender (about a minute on high heat). Toss in the leaves to wilt and splash on the fish sauce. When done, turn off the heat and mix in the peanut butter in the residual heat to coat veggies. Mix in the maple syrup and serve with 2 day old rice fresh from the microwave.
