The local brew shop has Eucalyptus honey, and I'm very curious, so I decided to try a 1 gallon batch using just that honey.

  • 3 lbs Eucalyptus honey
  • 1 gallon water
  • Yeast nutrient
  • Yeast energizer
  • Lalvin D 47 yeast

I'll boil the water for a little while, then take it off heat, add the honey, cool, pitch, and go. And that's more or less what happened. Pitched at 106F. We'll see if I killed the yeast.
